Superbowl Recipes Sure to Beat the Competition
It’s that time of year again when Chicagoans gather together for the Superbowl. It doesn’t matter what team, the bears or not, its all about seeing a good football game, celebrating with friends during a geared-up Superbowl party, and satisfying your appetites.
Have you thought about what defensive dish you’re going to pass? Don’t worry about it! We’ve tackled down some ideas for you.
Buffalo Wing Dip (slow cooker)
Prep Time: 10 mins
Total Time: 25 mins
Ingredients:
2 (10 ounce) cans chunk chicken, drained
2 (8 ounce) packages cream cheese, softened
1 cup Ranch dressing
3/4 cup pepper sauce, such as Franks Red Hot (more or less depending on your preferred level of hotness)
1 1/2 cups shredded Cheddar cheese
1 bag of your favorite tortilla chips
Directions:
Place all ingredients (except chips) into slow cooker and continuously stir until completely melted. Enjoy!
Meatball Calzones
Prep Time: 15 minutes
Total Time: 28 minutes
Ingredients:
1 can (13.8 oz) refrigerated pizza crust
1 jar (24 to 26 oz) mini-meatball pasta sauce
1 cup shredded Italian cheese blend
Preparation:
1. Heat oven to 425°F. Line a baking sheet with nonstick foil.
2. Unroll crust on a cutting board and stretch dough to a 12-in. square. Cut in quarters (you’ll have 4 squares). Transfer to lined baking sheet.
3. Pour sauce into a bowl. Using a slotted spoon, equally distribute meatballs in centers of squares. Top each with 1/4 cup cheese. Fold corner to corner to form triangles. Press edges with tines of a fork to seal; poke holes in top with fork.
4. Bake 10 to 13 minutes until golden. Meanwhile heat remaining sauce to serve on the side.
Spiced Meditteranean Burgers (www.ivillage.com)

Total Time: 30 mins
Ingredients:
1 pound finely ground beef
1 pound finely ground lamb
1/2 onion, peeled, finely grated
1 teaspoon finely chopped garlic
1 tablespoon extra-virgin olive oil
2 tablespoons chopped fresh flat-leaf parsley
1 tablespoon chopped fresh cilantro
1 teaspoon dried oregano
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cumin
1 teaspoon hot pepper sauce
Salt and freshly ground black pepper
To serve:
8 small baguette rolls/pita bread
8 shallots, peeled, thinly sliced
Chopped fresh flat-leaf parsley
4 large tomatoes, thinly sliced
4 whole fresh cilantro leaves
2/3 cup plain Greek-style yogurt
Directions:
1. Preheat the barbecue or broiler.
2. Place the burger ingredients in a large bowl, blend the mixture with your hands, taking care not to overwork it.
3. Form the mixture into 8 long oval shapes, about 1 inch thick.
4. Chargrill, broil or fry the burgers for about 5 minutes on each side for rare, or to your taste.
5. Split the rolls or pita breads without cutting them through. Remove some of the bread from the center of the rolls. Place some tomato and shallot slices in the rolls, add the burgers, and garnish with flat-leaf parsley, fresh cilantro and Greek-style yogurt.
Chocolate P&B Quesadillas (www.cooksrecipes.com)
Ingredients:
4 (7 to 8-inch each) flour tortillas
Butter, softened
1/4 cup creamy or crunchy peanut butter
1/4 cup marshmallow creme
2 small bananas, sliced
1/2 cup milk or semisweet chocolate chips
Directions:
1. Spread one side of each tortilla with just enough softened butter to cover lightly. Place tortillas on clean work surface, buttered sides down.
2. Spread 1 tablespoon each peanut butter and marshmallow creme on half of each tortilla.
3. Arrange 1/4 of the banana slices and 2 tablespoons chocolate chips over marshmallow creme; fold each tortilla over to cover filling.
